These, my friend, are the 4Cs Cookies. Technically that could be 5Cs but then I couldn't call them cookies because "cookies" would be one of the Cs. Right?
I revel in confusion.
And coconut. Coconut with caramel, chocolate chips and pecans, stirred together and toasted into a gooey mess of yumminess. . .
Sadly I didn't have any pecans this time.
I did have this:
7 ou coconut (I used sweetened, but unsweetened would work)
1 13.4 ou. can Dulce De Leche (found in Mexican aisle)*
3/4 cup chocolate chips
1/2 cup chopped pecans (optional)
1/2 cup flour
Preheat oven to 375.
Stir all ingredients together. (Zap in microwave for 15 seconds to help soften the caramel a little without totally melting the chocolate.) When combined, drop onto parchment paper into heaping globs of deliciousness.
Place in oven for about 10-15 minutes, or until desired level of toasted goodness. Let cool completely.
*Dulce De Leche is nothing more than sweetened condensed milk already made into caramel. So with this stuff, there's no need to do the whole crock-pot-water-bath-for-hours. It's already done for you. And it makes a great caramel sauce or stir-in to your coffee for a caramel latte.
