1 cup orzo, cooked and drained
2 cups fresh spinach
1 red pepper, chopped
1/2 cup bacon, fried and crumbled
1/3 cup Feta cheese
1 lemon, juiced
1 T brown sugar (more, to taste)
Combine and mix well. Pour half over salad and mix. Chill for 30 minutes. Toss with remaining dressing before serving.
2 cans black beans, rinsed and drained
2 cans corn, drained
1 bunch cilantro, chopped (top 1/3 of bunch only)
1 cup sharp cheddar cheese
1 red pepper, membranes and seeds removed, chopped
5 green onions, green parts chopped
1/2-1 cup sour cream
Sriachi, optional, but delicious spice spike
Combine all. Add salt and pepper as needed.
Serve with tortilla chips or top grilled chicken or fish. Also great on salads.
